He explains what waste means for the climate crisis and why it is important—both in terms of negatives and positives—saying methane is a powerful greenhouse gas with 100 years global warming potential, which is 30 times larger than CO2, and that 60% of the total food production is currently wasted in Canada, which mostly happens upstream, and yet waste also represents opportunities.
